  • 3 Overripe Bananas
  • 2 Eggs
  • 6 tbsp Butter (Unsalted)
  • 1.5 Tsp Vanilla Essence
  • 1.5 Cup of Flour
  • 3/4 Sugar 
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 0.5 tsp Salt
  • 1 tbsp Cinnamon

BANANA CINNAMON MUFFINS RECIPE

1. Mash your bananas and add vanilla essence and egg to the mix.

2. Add butter, sugar and whisk them well.

3. Now sift the flour, baking soda, baking powder. It is to ensure there are no lumps.

4. Add salt and cinnamon.

5. Whisk until all incorporated, and don’t overdo it.

6. Line your cupcake tray with cupcake liners, and add one ice cream scoop of mixture into one cupcake mould. Don’t overfill it, just fill 3/4 as it will rise. 

7. To add texture, you can also add a piece of walnut on each cupcake at this stage.

8. Bake in a pre-heated oven at 180 C for about 20 minutes or until it feels bouncy to touch from the centre.
